What’s the difference between blender/io and blender/editors/io directories?
As far as I can see, it seems that stuff in blender/editors/io is more tied to the user interface, but not sure. Sorry if I missed some documentation, but I’m a bit lost ^^‘’

Yes, pretty much. “editors/io” is user interface bits & “operators”, “io” is actual import/export code. The first one calls into the second one.
