In fact I cannot render the Sinosauropteryx prima when Metal GPU is enabled (out of video memory message) even in my MacBook Air M1 with 16GB of ram.

This scene is particularly heavy on curves. It is worth enabling the “MetalRT (Experimental)” checkbox if you haven’t already done so - MetalRT uses less memory for curves.
